    Can substitute chicken stock for vegetable stock, and pumpkins or sweet potatoes for butternut squash.

    Just what's needed on a cold, wet, January day. I was 150gr short of squash so added 2 potatoes and (of course) a couple of handfuls of red lentils. As well as the suggested topping of pumpkin seeds I also added toasted coconut flakes. Mr P gave it a 5 star rating!
