Beef must marinate 8 hours before grilling. Can substitute canned chipotle chiles in adobo for dried pasilla de Oaxaca chiles; apple cider vinegar for pineapple vinegar; the book’s “Salt-cured dried beef” recipe, beef Milanesa, pork Milanesa, or other lean meat for store-bought cecina; avocados for guacamole; and Anaheim chiles, jalapeño chiles, or banana peppers for agua chiles.
