    I used 5 oz arugula and we liked the extra greens, although there were lots of other vegetables. Half the dressing was plenty. 2 tsp salt seemed excessive for the shrimp, but they turned out perfectly (some of the oil/s+p remained on the sheet pan). I questioned the extra 2 tsp salt at the end, but added it after tasting the vegetables - unfortunately, my taste did not include the feta and capers, and in the end the salad was far too salty. The extra vinegar at the end also made it overly acidic for my taste. Usually I add extra vegetables to recipes, but in this case I actually wanted more shrimp. I think I would love this dish with more shrimp, no vinegar at the end, and only a light sprinkling of extra salt (if needed), still using half the dressing.
