    Recipe is on page 40 of the Costco edition only. Can substitute elbow macaroni for cavatappi. Pasta mixture must be made one day ahead and can be made up to two days ahead.

    The volumes and weights of the cheeses did not correspond to those in Ina's previous mac & cheese recipe; I went by weight. I used cavatappi, orange cheddar, 2 c cream + 1 c half-and-half (to save a few calories). The liquid wasn't fully absorbed overnight - the pasta at the top of the bowl was drier - but the pasta baked up fine. 3 slices of bread were enough for the crumbs. This was really delicious, with just the right amount of cheese - rich, but not as rich as you'd expect. 3 of us nearly finished it all.
