    I was nearly out of Kansas City Canning Company's Radish Pickles and wasn't quite ready to give them up. So, looking for radish pickle recipes, I came upon this Tassajara recipe ... with the added advantage of fond memories from a very different time. I went with demerara sugar knowing it would slightly discolor the white daikon ... but I prefer the flavor. I followed the directions and used rice vinegar to complement the mirin rice wine. While I hadn't made these for years, I absolutely love them. They are very versatile compared to Japanese quick daikon pickles. Try these on a taco. Yum.
