Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    This dish took an overwhleming number of ingrediants to the point I was concerned about ratios. Did they use restaurant quantities for the spice paste? No, it is exactly correct and it is astonishingly flavorsome. It's plenty of labor - at least three hours even if you have pork broth at the ready (I did not). But the end result more than justifies the effort. Glorious. Sweet, salty, fiery, sure, but that doesn't begin to capture the many tastes and the final product. This is a terrific book that should be as aclaimed as anything by David Thompson or Andy Ricker.
