Both the rice and filling must be made the day before or several hours in advance. Can substitute carnaroli rice for arborio rice; vegetable broth for vegan chicken broth; other dry breadcrumbs for panko breadcrumbs; and store-bought vegan bacon, pancetta, prosciutto, or the book's "King trumpet mushroom bacon" (P.205), the book's "Prosciutto" (P.207), or "Pancetta or smoked tofu" (P.208) for store-bought vegan ham.
