    These cookies are a bit of a process - if you use cottage cheese it needs to drain overnight and then the dough needs to rest overnight - but nothing is particularly difficult. As the previous note says, you need to be extra careful not to use too much flour rolling them out, because the flour inhibits the sugar sticking. I used a tiny dab of jam in the middle as Dorie suggests - half sour cherry and half apricot - and it was a lovely addition.

    These cookies have an intriguing flavor and are unlike any other cookie I’ve made. I used cottage cheese that had drained overnight per Dorie’s instructions. I had a hard time rolling my first batch of dough and found it needed to sit out and warm up for 10-15 minutes before rolling. I was concerned about getting enough sugar to stick to the dough so I patted it lightly into the sugar on a plate and then sprinkled just a bit more on top of the finished cookie. Next time I will be extra careful not to use too much flour when rolling these out.

    These are incredibly delicious, very quick and easy to make and as of now a family favorite. Made with quark cheese.
