    For me, this was the least successful recipe I’ve cooked from this book. In fact, it’s one of the worst recipes I’ve cooked in a long time. The ice baths make the vegetables very crisp but it also makes them have a watery flavor. The suggested dressing is very subtle, making the whole thing flavorless. With a punchy and flavorful dressing, this would be a successful dish. But with lemon vinaigrette, it was terrible.

    I loved the crispness of the veggies but the dressing was lacking some punch. Maybe more lemon next time?

    I’ve made a lot of recipes out of this cookbook. This is my least favorite. It doesn’t come together like the others but it is still very good.

    Bright, crisp, tasty. Used Crunchy spiced roasted chickpeas from the book Cool Beans. This salad feels a bit cheffy, with the mandolines and blanching and ice baths, but it's not difficult and there's plenty of time while the chickpeas are roasting.
