Gluten-free waffles from The Breakfast Bible (Williams-Sonoma): 100+ Favorite Recipes to Start the Day (page 77) by Kate McMillan

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

The finished waffles were tasty but the batter was way too thin and poured out of my waffle iron meaning I couldn't fill the iron enough to get properly shaped waffles. My waffle iron is one of the thinner heart shaped Norwegian style waffle iron and it might work better if your waffle iron is a deeper American/Belgian one. This is the first gluten free waffle I've made but I've made loads of different regular waffle recipes and not had a single issue with any of the others. I wonder if a little coconut flour would have helped thicken it a bit? I don't think I would use this recipe again (even though they were tasty) as I'm now going to have to spend ages cleaning my waffle iron!
