    Despite omitting the cheese (served it with optional parmesan), this was very rich (too rich for us) thanks to the oil for the roasted tomatoes and the oil in the pesto. I used a 186ml jar pesto as part of the liquid; an additional 1 cup of water was required, added during the latter stages of baking. I liked it better second day but I won't make this again.

    I used cauliflower rice instead of orzo, less pesto, and added red pepper flakes. Very good flavors and definitely something I'll make again.
