    This is a fabulous recipe that lets vegetables shine in late fall/winter months. The coriander seeds adds a subtle lemon to the roasted root vegetables. Fresh lemon juice and parmesan adds rounded flavors - both body and brightness. The basil and olives bring out new dimensions of root vegetables. This can play a starring role at a dinner party, even when hosting avowed carnivores.
