    This recipe appears in the book as a variation of "Prawn and brown rice jambalaya." Can substitute red peppers for yellow peppers, and vegetable stock for chicken stock.

    This was so good. Although initially it was to use up fridge ingredients, it's very tasty with lots of different textures and flavours. Not much clearing up as it's a one pot dish. Will definitely be repeated.
