    What a delicious way to enjoy late summer peaches. The balsamic maple vinaigrette was what made this salad so special. I used a white balsamic, since the recipe didn't specify, and I think it was a good choice for this salad. I subbed pecans since I had plenty of them, and I toasted them briefly. I didn't add the corn because it seemed an odd combination with the peaches--as much as I love summer corn, I just wanted the peach flavor to shine through and it did.
