Sardine and tomato panzanella from Delicious Magazine (UK), July 2022 (page 84)

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute country bread, ciabatta bread, or rye bread for sourdough bread; and regular chilli flakes for pul biber.

I made a slightly lighter version of this: I used the full quantity of sardines, but less bread and tomato, a lot less oil, added a bed of lettuce and divided between two people to make more of a full meal without quite so much oil. I can see how more oil would have given the whole thing a more unctuous and balanced flavour, I still enjoyed it as it was though. The combination of bread, sardines, pickled onion and tomato was really nice.
