Can substitute cooked lentils for tinned lentils; parsnips for carrots; oregano sprigs for thyme sprigs; smoked sausage or leftover meatballs for cooked bacon; mushrooms or spinach for cooked potatoes; and mashed potatoes, the book's "Mashed kohlrabi", or "'There's nothing wrong with that cream!' potatoes for cooked polenta.
