    I found the dressing bland - dressed it up with a touch of balsamic and made a huge difference. Just needs something 'more'. Loved letting the celery soak a few, added some spring onions with it as well. The pecorino shavings were yummy!

    I really liked this. The dressing 'makes' it. Different... but in a nice way! Used festival lettuce, which was the closest I could get to butter lettuce, and cheese that was labelled simply 'pecorino'. A nice touch to marinate the celery. It beautifully complemented the risotto bake I served it with.

    This was just okay but it may deserve a do-over because I failed to marinate the celery and used raw, unsalted pistachios. That said, the dressing wasn't my favorite.
