Porcini and prosciutto lasagna from Macerata (Iginia's princigras) from Pasta Grannies Comfort Cooking: Traditional Family Recipes From Italy's Best Home Cooks (page 182) by Vicky Bennison

  • nutmeg
  • semolina flour
Semolina is the hard part of the grain of durum wheat. When hard wheat is ground, the endosperm--the floury part of the grain--is cracked into its two parts, the surrounding aleurone with its proteins and mineral salts and the central floury mass, also called the endosperm, which contains the gluten protein that gives hard wheat its unique properties for making good pasta. A cream-colored semolina is used in pasta or Italian-style breads. There are difference grades: (1) Semolina flour is finely ground endosperm of durum wheat; (2) Semolina meal is a coarsely ground cereal like farina; and (3) Wheatina is ground whole-grain wheat. When other grains, such as rice or corn, are similarly ground, they are referred to as "semolina" with the grain's name added, i.e., "corn semolina" or "rice semolina." Notes about this recipe

This was a rustic and delicious recipe that was thoroughly enjoyed by everyone in the family. It does take some time to prepare (about 2-2.5 hours of hands-on time followed by one hour in the oven) but it is soooo worth it. I added a large heap of baby spinach and a clove of garlic to the mushroom mixture, with great results. I also had to add 2-3 extra handfuls of water to the dough, probably because I used a stone-ground semolina flour that absorbed more water. The dish serves about five people as a main course. Next time I think I will accompany it with a simple salad, to balance the richness of the sauce and filling with some acidity. A top 5 recipe for me in 2024. Exceptional.
