    I agree with bwhip...this was great. It is quick to put together for the oven and we liked the combo of seeds (fennel & mustards) + the fresh rosemary. The shallots/roasted garlic were delicious with the moist chicken & spooned over the fresh herb potatoes I made. I also used white wine and I scaled the lemon back to just 4 slices as we can sometimes find it overpowering in savory dishes.

    Fantastic, one of the best roast chicken recipes I've ever made. Lovely flavor from the herb and spice blend, and the shallot/lemon/garlic sauce was delightful. The only change I made was to use white wine rather than rose'. We'll have this one again for sure.
