Lamb marinates 8 to 24 hours. Cooked lamb refrigerates at least 8 hours. Can substitute chicken stock or beef stock or a combination for lamb stock; dried apricots, dried dates, or a combination for raisins; pistachios or cashews for almonds; and ajwain seeds for nigella seeds.
