Can substitute large white mushrooms for cremini mushrooms, white wine or chicken broth for sherry, pecorino cheese for Parmesan cheese, mixed herbs or green onions for Italian parsley, Kalamata olives for sun-dried tomatoes in oil, and black pepper for crushed red pepper.
