    OMG this was fantastic! The pork was flavourful and tender and was an interactive event for the family. Couple of notes, make sure you scrape all of the dry brine off the pork before cooking or the outside is a bit too salty. I used hot oil in the ginger/shallot sauce which didn't make much difference, but I'd do it again.
