    Can substitute butter for olive oil, and vegetable broth for chicken broth.

    So good! Sautéed the veg in a small non-stick pan with only 1 tsp of olive oil. Used 1.5 rice cooker cups of jasmine rice to equal the 1 cup of rice called for in the recipe. Adjusted the amount of chicken broth for the rice cooker and then added the veg, tomato paste, and spices. Stirred until the tomato paste dissolved and then set the rice cooker to the white rice setting. May try adding some chopped up sun-dried tomatoes next time. Only other ingredient change was to omit the sugar.
