    Easy to make and good, not super exciting. I made her enchilada sauce and think I prefer one with more chile. She says it won't all get used, but I found I needed it all. I added an extra zucchini and mixed the corn and beans in with the other vegetables. I had to turn the oven hotter for it to bake in the stated time.

    This is a very tasty and economical meal. Makes 6 generous servings. Delicious topped with sour cream and avocado and served with a green side salad. Reheats well.
