    This was so decadent. The creamed spinach was a unique and delicious touch.

    Rich and cheesy Italian-American-style lasagne, delicious with the eggplant, zucchini, and creamed spinach. Changed the layering order to include divided ricotta mixture and tomato sauce along with the roasted vegetable layers for more balance. A half recipe in an 8x8” Pyrex dish feeds 4 generously.

    1 1/2 hours prep was correct. Could amp up the seasoning a little. Made enough for at least 10 serves. Would make again.
