    This was quite good - a nice variation on a meatloaf that was much lighter in taste and texture thanks to the addition of the roasted eggplant to the pork. I did mix some breadcrumbs into the meat instead of just topping and lining the pan with them, to aid with the binding, and used a shredded cheese blend as that was what I had on hand. Worked well and the S.O. liked it enough to say this recipe is a keeper.
