Can substitute Colby Jack cheese blend or Mexican cheese blend for Monterey Jack cheese. You may use the Quick pickled red onions recipe for p. 194, and the Pico de gallo recipe on p. 152.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

A fair amount of work for nachos, however it's largely hands off, so it's not overly demanding. The carnitas turned out really nice. Something to note: It states to cut off 2" of orange rind and then never mentions it again. I'm guessing it's to season the meat while it's cooking, so I just put it on top in the pan. Not sure that it was necessary.
