Viral Smash Burger tacos from Rachl Mansfield

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I also made these several weeks ago and they mostly came out ok using mini corn tortillas. Used a very large two gas burner sized cast iron pan for this to make 8 tacos at once. I have okonomiyaki metal spatulas that work really well to flip when food being cooked sticks like these burgers did. Also used cast iron heavy steak/meat presses to smash these. My only issue was I should have made 6 at a time because my pan got a little crowded when flipping. Once turned over, lightly charred the tortillas. We liked these fine, but ended up adding shredded lettuce, sliced onion pieces, shredded cheese and salsa which defeated the purpose of burger idea.

Sadly, these did not turn out great for me. Despite trimming the flour tortillas down to 6" diameter, they were still much larger than the smashed patties, and the edges got burnt by the time the burgers were cooked - we had to cut them away. I used cast iron pans - perhaps too hot? But they needed to be in order to cook the meat quickly and get good flavor. My husband and I had a lengthy discussion about various changes that could be made for this to work well, then finally concluded that we'd just as soon make traditional smashburgers on buns.
