Can substitute kabocha squash or another winter squash for calabaza squash, habanero pepper for Scotch bonnet pepper, cassia for ground cinnamon, and all-purpose flour for whole wheat flour. You may use the book's "Bajan pepper sauce" recipe on p.19.
