This recipe appears in the book as a variation of "Chickpea pickle collard wraps". Can substitute other plain vegan milk for unsweetened almond milk, sweet white onions for red onions, baby spinach for collard greens, whole wheat tortillas for whole wheat lavash bread, and flat-leaf parsley for dill.
