    This was a delicious quick weeknight dinner. I used 8 oz of soba noodles for a more noodle-forward salad. My soba noodles took 7 minutes to cook, which was longer than the recipe called for, so better probably to follow the cooking time on the box. I added jalapenos and bell peppers too, which were good. Top with sriracha or sambal!
