    Delicious, and customizable. Short on strawberries, I added a sliced white peach with the lychees, lime and mint. I prepped these 45 min ahead with the layers of fruit, ice cubes, and lychee syrup. At serving time, I filled the glasses with ginger beer, bitters and garnish. It's good to have a long handled spoon on hand in case the fruit creates empty spaces. The angostura bitters add a depth that I wouldn't skip. We added 2 oz vodka to the adults' drinks, and its flavor was dangerously imperceptible. A great accompaniment to spicy recipes in the book, and could also be a dessert or brunch cocktail.
