Braised pork al pastor from The World Central Kitchen Cookbook: Feeding Humanity, Feeding Hope (page 60) by José Andrés and World Central Kitchen

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

Can substitute boneless pork butt for boneless pork shoulder.

This is an excellent recipe except the timing, I also need to cook it longer. I did the fresh pineapple and it was excellent along with diced fresh onion. I will make this again.

This was so incredibly good! I marinated the pork overnight and followed the recipe exactly as written (except leaving my pork shoulder in the oven for longer since it wasn’t fork tender yet) and the flavors were incredible. Leftovers were even better the next day.
