Can substitute Comté cheese for Gruyère cheese, penne pasta or other short pasta for elbow macaroni pasta, the "Low and slow roasted plum tomatoes" recipe on page 165 for roasted tomatoes, and Aleppo pepper for ground cayenne pepper. Can use the "Classic roasted tomatoes" recipe on page 48.
