Can substitute red cabbage for green cabbage, Thai red chiles for Thai green chiles, maple syrup for honey, and tamari for soy sauce.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

We enjoyed this dinner. The yuba sheets I had were frozen in a big wad and nothing like the nice sheets shown in the pictures. Bit of a disaster there. I liked the crisp-chewy texture of the yuba, and we both thought the sauce combined with the charred cabbage was delicious. Leftover yuba was very chewy on day two.
