Chinese scallion pancakes (葱油饼) from Omnivore's Cookbook

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

The flour-oil paste utilized in this recipe has made this batch of scallion pancakes the best I've made, though it definitely needs the dipping sauce as the dough lacks enough salt to taste good on its own. I made the dough in a food processor, using 3/4 cup near-boiling water, and kneaded briefly by hand to bring it into a cohesive ball. Worked great!
