Baked apple oatmeal from Local Dirt: Seasonal Recipes for Eating Close to Home (page 136) by Andrea Bemis

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute pears for apples, dried fruit of your choice for dried cranberries, and nuts of your choice for walnuts.

Walnuts overpower everything else. Will make again because the concept is solid, but would swap for sliced almonds or another less potent nut.

Very good. Loved that it wasn’t too sweet. Baking rehydrates the dried fruit and mix well with the apples. I used dried cherries and dried cranberries - liked the combination. Used the standard small individual ramekins- it filled them up. Put the ramekins on a parchment lined baking sheet so it took a little longer to cook. They was a marginal amount of run over but glad I had lined the pan. Unless there is a reason for the individual servings I will bake in a pan next time. The batter is lumpy and runny so a bit of a pain the fill the ramekins with a mix of oats and liquid- but the ramekins look nice. Definitely a redo.
