Can substitute dry sherry for Shaoxing rice wine, peanut oil for rapeseed oil, peanut butter or tahini for Asian sesame paste, dark soy sauce for light soy sauce, and other noodles for ramen noodles. Can use the Chinese chilli oil on page 246.
