    Easy and delicious! We did add lime juice and pickled jalapenos to the chimichurri

    I used pre-roasted sweet potatoes, so they didn’t cook with the seasonings on them, but that difference didn’t stop the dish from being delicious. I added the potatoes to the pan with the spices and the black beans. I used Mexican oregano and black beans that I cooked in the Instant Pot. I will make this dish again.
