Tangy lemon & juniper bars from A Whisper of Cardamom: 80 Sweetly Spiced Recipes to Fall In Love With (page 210) by Eleanor Ford

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Lovely lemon bars - I didn’t make the recipe in the main description and instead did the suggested “spice swap” using fresh lavender from my garden in the base. I found the base biscuit layer needed about ten minutes longer than written to turn golden, and did about 25 mins with the top layer. I ran out of lemon so had to bulk it up with a bit of orange but the lemon turned out predominant anyway. I am not so sure how it was supposed to turn out - I’d have appreciated a note on this in the recipe description. Should they be fully set or more like lemon curd? At any rate mine turned out with a thin set top and a gooey lemon curd centre with a crumbly lavender base and they’re delicious. They are zingy but very sweet - would still be delicious with a bit less sugar in the lemon mix. Would make again for sure. Very simple little bites. I’m not sure I’d do the juniper/gin inspired version as I’m not a gin and tonic fan at all and the lemon lavender combination is super.
