Mushroom and cauliflower carnitas from Cooking with Mushrooms: Unlocking the Powerful Flavors and Health-Giving Properties of the World’s Most Magical Ingredient (page 135) by Andrea Gentl

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

Can substitute butter for ghee, and the book’s Miso powder on p. 53 for ground turmeric.

Followed the recipe. I didn't have miso powder, so I used half turmeric and half tomato powder. Pretty good, but too limey and acidic. Also, I put the recipe into My Food Diary to figure out the nutrition info and it's super high in sodium. I might try this again, but would adjust for salt and acidity. I'm assuming the high sodium content came from the fish sauce.
