Banana and olive oil loaf (no added sugar) from How To Go Plant-Based: A Definitive Guide For You and Your Family (page 269) by Ella Mills (Woodward)

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute Medjool dates for prunes.

Very nice. It's not overly sweet but you get enough sweetness from the bananas and dried fruit not to miss the added sugar. As well as using dates instead of prunes, I made a few other substitutions: fat free Greek yogurt for coconut yogurt, chia seeds for flaxseed and vanilla essence for vanilla bean paste. Really hoping my three-year-old likes this too so I can make regularly as a non-UFP snack/dessert.
