      Very good - easy and low effort for a weekday supper when I was tired, I needed to add more liquid than called for to the dish as it cooked. I also learned that the lima beans of the recipe title are the same as butter beans! Will definitely make again.

      This was alright, bit like a risotto, just with pasta. I liked the taste, but not enough to make it again. The recipe makes a massive quantity, and I think the orzo pieces will soak up all the liquid and become really stodgy.

  • Oven-baked peanutty eggplant

      Served this over coconut basmati rice, which tasted really nice. However, I’m not too keen on the tough skin that roasted aubergines get, so not sure I’d repeat. Liking the peanut sauce though!

  • Winter Bolognese: tofu and root veg

      I wasn’t convinced while cooking, as it seemed heavy on the leek (used two fat ones), but it actually came out quite tasty. I would be more careful with the soy sauce and veg cube next time, it was verging on being too salty. Would try again though.

  • Easy berry muffins

      These were alright. Definitely easy, perfect recipe to use up berries slightly past their prime. Only used 80g of sugar as had run out - would probably use more next time, as muffins barely sweet (not inedible though). Replaced oat milk with natural yoghurt. Would make again.

  • Banana and olive oil loaf (no added sugar)

      Very nice. It's not overly sweet but you get enough sweetness from the bananas and dried fruit not to miss the added sugar. As well as using dates instead of prunes, I made a few other substitutions: fat free Greek yogurt for coconut yogurt, chia seeds for flaxseed and vanilla essence for vanilla bean paste. Really hoping my three-year-old likes this too so I can make regularly as a non-UFP snack/dessert.
