Black sesame and coconut buns from King Arthur Baking by Hetty Lui McKinnon

  • unbleached bread flour
  • instant yeast
Instant yeast appears similar to active dry yeast, but has smaller granules with substantially higher percentages of live cells per comparable unit volumes. It is more perishable than active dry yeast, but also does not require rehydration, and can usually be added directly to all but the driest doughs. Instant yeast generally has a small amount of ascorbic acid added as a preservative. (Wikipedia) Buy Now

Great tasting little buns. The dough was easy to work with, but make sure you don’t overdo the coconut milk, a wet filling would make it difficult to seal the buns. The baked dough was soft and thin, thus a great dough to filling ratio. Black sesame and coconut is a new combination to me, white sesame and coconut is more common.
