    As promised this has a pretty classic flavour profile which I certainly like. I diced my carrots, adding them with the onion/celery rather than the later addition of matchsticks and for the medium cheddar, I subbed in Monterey Jack. I used a squeeze of lemon to finish rather than the suggested nutmeg.
