    Coconut Pumpkin Red Curry Stew - just picked this book up and this was the first recipe. Easily doubled (teen boys!). It has already been requested again - great flavour profile. Some liked it thinned with water for more soup like texture, others preferred it thicker - easy satisfy both preferences.

    Carrot ginger soup: good simple soup but not best I've ever eaten. 3.5/5 Green tahini: 3-3.5.5; I really liked it but note that it was a bit bitter at end. Oatmeal: 4/5 great texture, egg is necessary

      Delicious! Perfect comfort meal to kick off the first day of October. We ended up needing more than 1 head of cauliflower to reach 2lb. Luckily we had some other bits leftover from a previous recipe. Added bacon + a biscuit into it - taking inspo from the “new twist” recipe on the next page.

      Good and easy. Immersion blender did not get smooth enough, blender would have been better. Pickled mustard seeds delicious but have to make day ahead. Made some mustard croutons as well.

      Not bad. Easy enough. I made the pickled mustard seeds, but I did not care for them. I don’t know if I messed them up or if it just didn’t work. I will top leftovers with chips.

      I cut this in 1/2 using a 9 oz Yukon gold + 3 cups of cauliflower florets & I cut back on the water. My gruyere was topped up with asiago & we both think this is really good even without the pickled mustard seeds (try another time). I used my big blender rather than the immersion one for a lovely smooth soup.

      Made with sad, tough, underripe winter tomatoes and had to roast longer than the recipe called for that reason. The soup was delicious. Great with grilled cheese.

      Delicious with any kind of tomato, although it's definitely at its best with good ingredients. Freezes well.

      I had froze some leftover soup & decided to make this recipe as I had all of the ingredients on hand. Really delicious. I separated the sauce from the noodles rather than mixing it all together to keep noodles from becoming mush upon reheating. I ended up with a lot more sauce than noodles, but the pumpkin cheese sauce is delicious & would be a great topper on a lot!

      Another great recipe from this book! I had some extra pumpkin hanging out in the fridge. It was a blustery day outside. This felt so simple & cozy to make. Simmering the lentils for 15 minutes was perfect for me. Topped with greek yogurt for an extra protein boost!

      Another winner from this book! I basically had all the ingredients on hand so I decided to give this recipe a go. I used 2 cans of a triple bean blend instead of just black beans. A yellow onion rolling around in the fridge. And fried up some flour tortillas in the air fryer for the strips since I didn’t have any corn ones on hand. Delicious!

      Quite good! This is the first carrot ginger soup I’ve had that had orange juice/zest in it. The flavor really came through! We also made the green tahini as suggested. It did look pretty, but flavor wise I didn’t feel it added a ton. I think my favorite carrot ginger soup remains to be from the Cookie & Kate blog, but I can definitely see myself making this recipe again!

      Another winner from this book! This was a bowl full of cozy on a cold day. One Serrano (seeds kept in) really added some nice heat! I had some shredded chicken already cooked off from a previous day so i added that in as well. Do not skip making the green apple-mint chutney to go along with this recipe! I do recommend mashing some of the potatoes with a potato masher rather than a fork.

      This might be my fault. I substituted some red onions to get to 3lbs and they had been around for a while. Next time all new white onions and tasting along the way for some of the sauces.

      As promised this has a pretty classic flavour profile which I certainly like. I diced my carrots, adding them with the onion/celery rather than the later addition of matchsticks and for the medium cheddar, I subbed in Monterey Jack. I used a squeeze of lemon to finish rather than the suggested nutmeg.

      Delicious and comforting on a super cold day! I used 2 chipotle chilis because I like heat! Added some seasoned TVP after the fact to up the protein content. Very flavorful & the cocoa powder was a fun addition!

      Delicious and flavorful! My husband came home from work excited; exclaiming he could smell this from outside. A helpful tip for the next person who makes this - start this earlier in the day than I did. Pressure is supposed to drop naturally. Mine took an additional 45 minutes to do so.

      Roasting the vegetables 1st is now my preferred method for vegetable broth. This version is very good as written but I did use an idea from another recipe I like, adding a good glug of Pinot Grigio for the last few minutes of the simmer.

      This is a quick way to turn a very inexpensive no-name box of vegetable stock into something that I'm much happier to have on hand (frozen in 1 cup blocks). The idea of the champagne vinegar at the end seemed odd but it certainly added something good to the finished broth.

      I love this salad - this dressing is becoming my house dressing. I mix up the add-ins, but always include chickpeas! Adding some smoked chopped almonds really takes it to the next level

      I used my mini blender to combine the jam + vinegar (this time sherry in place of red wine) and then just shook everything else in, including diced pepperoncini (rather than using them on the actual salad). My salad was simpler than hers with romaine, red onions, sweet peppers & grated carrots. Some might find the dressing a bit sweet but we thought it was pretty good :)
