How to make the perfect vegan meringues from The Guardian Feast supplement, April 27, 2024 (page 18) by Felicity Cloake

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I was very keen to try this recipe as my previous efforts at vegan meringues have been flops and it is a triumph. I bought Oggs aquafaba in a carton and followed the recipe exactly and got 32 delicious, crisp meringues which spent 1 hr 50 minutes in my convection oven cooking and then half an hour cooling with the door ajar. I've uploaded a photo of one cut in half and the sheet full so that you can see the results. My friends all said they were deliciously light and crisp and tasted of sugar and nothing else so no lingering bean flavour or aroma either. PS I'm in the UK and bought the aquafaba at a branch of Holland & Barrett health food shop.
