Can use the book's "Vegan fish sauce" recipe. Can substitute rice stick noodles for egg-free yellow noodles, vegetable oil for coconut oil, spinach or other tender greens for rainbow chard, tinned beansprouts for beansprouts, vegetable oil for coconut oil, garlic paste for garlic, ginger paste for ginger, maple syrup or unrefined coconut sugar for date syrup, brown miso for yeast extract, dried shiitake mushrooms or any dried wild mushrooms for dried porcini mushrooms, and Henderson's Relish for vegan fish sauce.
