Part of the menu for An Elegant Autumn Picnic. Can substitute fresh thyme for dried thyme, fresh rosemary for dried rosemary, and red leaf lettuce for spinach. Lamb in the marinade should be refrigerated for 3 to 24 hours. Salad may be made several days before serving.
