    Super easy and nice looking summer dish. My puff pastry sheets didn’t really fuze together when I rolled them out, so I had three separate pieces. It still Puffed up after removing the second sheet pan, so I pressed it down with a spatula after baking. I had to spread the ricotta really carefully, otherwise the first layer of puff pastry would have peeled off.
